Blackened Catfish and Cheesy Grits

Ingredients

Catfish, Tilapia, Salmon, Fillets (I used catfish and tilapia) 



Andouille Sausage (I used Chicken Andouille Sausage made by Hoffy) 



Blackened Seasoning (I used Cajun Black seasoning by SweetSmokieJoe.com) you can use any Blackening season you want 



Grits - Amount is up to you 



Red Bell Pepper 



Any smoked cheese (Smoked Gouda is best) 



Bacon (optional) 



Salt 



Green Onions 



Butter  



Cajun Gravy Roux Ingredients 

3 tbsp All Purpose Flour 

3 tbsp Vegetable Oil  



Gravy Ingredients (add this to your roux) 

9 tbsp All Purpose Flour 

4 cups Chicken Broth 

1/2 tsp White Pepper 

1/4 tsp Cayenne Pepper 

1/4 tsp Paprika 

1/2 tsp Salt
