Pineapple-Citrus Salad with Coconut
Ingredients
1 grapefruit, sectioned, reserve juice
2 oranges, sectioned, reserve juice
1 c pineapple chunks
1/4 c mint leaves
1 Tbsp agave syrup
1 tsp grated peeled ginger
1 c cottage cheese
·toasted coconut
Enjoy a tart fruit trifecta with grapefruit, oranges and pineapple slices — plus a dollop of creamy cottage cheese to help balance out flavors.
Instructions
Segment fruits and reserve any juices. Toss the segments with pineapple, mint leaves, agave and ginger. In another bowl, beat cottage cheese with the reserved citrus juice until creamy. Serve cottage cheese with the fruit salad around it. Top with toasted coconut and mint leaves.
