Blueberry Mimosa

Blueberry Mimosa

Ingredients

1/2 cup blueberries



12 packets of Sweet’N Low®



1/2 cup water



Champagne or sparkling cider

The cocktail that I decided to make was a Blueberry Mimosa. I used fresh blueberries and Sweet’N Low® to make a blueberry syrup. The syrup then can be mixed with champagne to make a delicious cocktail. I decided to make a non-alcoholic drink so that my whole family could enjoy it and used sparkling cider instead of champagne. You can also use sparkling water as a substitute to champagne as well.

Instructions

Combine the Sweet’N Low®, water, and the blueberries in a small saucepan.  Bring the mixture to a boil, stirring to make sure that the Sweet’N Low® has dissolved.  Boil for 1-2 minutes or until the syrup turns purple.  Remove from the heat and allow the syrup to cool for about 30 minutes.



Once the syrup has cooled strain out the blueberries if desired.



Evenly divide the syrup between 4 champagne glasses.  Fill the glasses with champagne or sparkling cider.  Garnish with a blueberry if desired.
